Summary

Within the framework of this project, the following objectives for strengthening the processing and marketing of organically produced pork are to be developed for advising organic processing companies and their suppliers, as well as the Federal Ministry of Food and Agriculture: – Basic principles on the effectiveness of selected plant extracts and polyphenols for quality improvement and preservation in meat products – Investigation of chemical and microbial stability and the inhibition of pathogenic microorganisms – Assessment of the extent to which nitrite replacement or nitrite reduction is possible – Approaches to clarify the mechanism of action of polyphenols
